Spinach Quiche

This is one of my all time favorite recipes – and a sneaky way to get in those greens! My mother has called this recipe “the best thing I ever made”. (And from her, that’s a real compliment)

Makes six large slices. Approximately 373 calories per slice.

Two 9oz. packages of frozen spinach
One cup skim milk
Two cups shredded low-fat cheddar cheese (I prefer extra sharp cheddar in this recipe)
Four eggs
One pre-made refrigerated pie crust
Salt and pepper to taste

1) Defrost the spinach to room temperature, set aside.

2) Place the pie crust in a pie plate (do not pre-bake).

3) In a large bowl, whisk together the eggs and milk. Add spinach, cheese, and salt and pepper. Mix well. Pour this mixture into the pie plate.

4) Bake at 375 degrees for 50 minutes. Allow to cool for five minutes before serving.

Extras:
If you like, sautéed onion, chunks of bacon (real or turkey) or honey ham can be added. This quiche is fabulous with a side of steamed carrots or side salad!
